
While not exactly like the Peek Freans, the flavours of this cookie evoke the memory of them. You still have your jeweled centre, and the addition of cream cheese in the dough base lends a creamy and subtle tang to the cookie that's reminiscent of the cookie and cream combination.
This recipe makes a whack load of cookies, and I find that they freeze well (be sure to put a sheet of parchment paper between each layer so the cookies don't stick to one another). Best of all, kids love these thumbprints (and they have so much fun making their thumbprints in each cookie), so they are a no-brainer for holiday gatherings. My go-to jam is raspberry, but feel free to use whatever jam you prefer (strawberry, apricot, cherry or blueberry would also work well).
