Swiss Chard and Onion Tacos

Sweet caramelized onions. Tender braised swiss chard. All wrapped up in a warm corn tortilla. Yes, like many who were celebrating Cinco de Mayo yesterday with tacos and margaritas, I too joined the bandwagon and threw together these quick tacos for dinner.

While I love me some meaty tacos, some of the best tacos I’ve had were vegetarian (LOVED the hen of the woods mushrooms taco I had at Empellon Taqueria in New York). And with swiss chard being one of my favourite greens, I was delighted to come across this recipe for Swiss Chard and Onion Tacos.

Roasted Tomatillo Salsa

The tacos come together so quickly, and only require a handful of ingredients, making these a perfect weeknight go-to recipe. Don’t skip out on the Roasted Tomatillo Salsa, if you can find your hands on some fresh tomatillos. There’s so much going on in the salsa—from the sweetness of the caramelized tomatillos, to their natural acidity, to a spicy kick—and adds freshness to the tacos, perfectly balancing the sweetness of the swiss chard and onion mixture. (And you’ll have plenty left to dip with some tortilla chips at the table too!)

Grilled Pork Tenderloin with Cherries Two-Ways

This summer has certainly been blessed and I’ve been making the most of it, as you can tell from my unexpected hiatus from here these past few weeks. The incredibly hot and humid weather had kept me out of doors, and out of the kitchen as well, as I had very little desire to cook in such stifling conditions.

But I find myself, with a quick blink of an eye, in mid-August now (oh where did the summer go?) and surrounded with the abundance of local vegetables and fruits at the height of their splendour: late summer cherries, juicy peaches, delicate zucchini and eggplant, sweet corn... And with some mild weather having rolled in (a gentle reminder from Mother Nature that fall is just around the corner…), I felt the pull of my kitchen calling me back.

Market Spoils: Spicy Chicken Thighs with Rhubarb-Cucumber Salsa

Rhubarb! Asparagus! Ramps! I’ve been rejoicing in these spring produce that have been available at my local farmer’s market these past few weeks before they quickly disappear and make way for early summer fruit and vegetables. (By the way, who's ready for strawberries?!).

I often keep things simple, roasting the asparagus and ramps with a light drizzle of olive oil and a sprinkle of salt and freshly ground black pepper. I often roast the rhubarb as well, with a little lemon juice, sugar, and a vanilla bean, turning it into this beautiufl sweet-tart, melt-in-your-mouth compote that I like to top my morning yogurt with a little drizzle of honey.

Millions of Peaches, Peaches For Me

One of my all-time favourite summer fruits is peaches. I can never get enough of them when peach season rolls around. Their fuzzy skin blushed red. Their fragrant smell. Sweet flesh. Juices dripping down your chin and arm.
