Mini Strawberry Cheesecakes

While it’s been an incredibly mild winter in our neck of the woods, it’s still winter none the less, and I’m counting down the days when the days are longer, the air is warmer, and the patios are open for business. But for now, the best way for me to chase away the winter blahs is with these adorable—and brightly coloured—Strawberry Cheesecakes!

National Banana Bread Day

Today is National Banana Bread Day, and to celebrate, I'm posting up my go-to banana bread recipe! I've turned to this recipe time and time again for many years now, and it never fails me. Perfect banana bread every time. Intense banana flavours. Not too sweet. Super moist. Great crumb. What else can you ask for in a stellar banana bread?

I don't remember where I got the original recipe, as it has been so many years ago. I have made numerous changes over the years to adjust to my own tastes, and the result today is the recipe found below.

Quinoa Granola

There's always a batch of granola in my house, as it's my morning ritual to have a bowl of yogurt with homemade granola and honey for my breakfast. This basic granola recipe I rely on still remains one of my favourites, but the most popular post on my blog here is actually this granola recipe made with steel-cut oats.

Twelve Days of Christmas, #2: Raspberry Cream Thumbprints

You know those fruit cream cookies? Those vanilla sandwich cookies with the jellied fruit center? I used to love those. It has been years since I've had one, and I'm pretty sure if I did pick one up today, I would grimace at its artificial flavouring. But I've finally come across a cookie that evokes the memories of said cookie without all the added unnecessary ingredients. It has also become another staple in my holiday baking line-up.

Peaches and Cream Pop Tarts

pop tarts_03

The peach love continues this week with some awesome breakfast pastries. Pop tarts have been on my list of things to bake for some time now. Yes, I admit to having eaten them as a kid. I remember the foil packaging, the variety of flavours, and the fake, fake taste. I think I liked the Strawberry flavour the best, mainly because of the rainbow sprinkles dotting the white icing. Yeah...I ate with my eyes back in the day...

The Sweeter Side of Peaches

peaches_05

The other day, I posted about peaches being highlighted in savoury dishes. Today, we take a sweeter look at peaches. I love baking with stone fruits. They hold up so well after being exposed to the elements of heat, and their flavours get intensified. Making the most of all the fruits I recently picked, I made a summer fruit crisp with peaches, apricots, cherries, and handful of blueberries for good measure.

Peaches Galore!

peaches_01

I have been basking in sweet, juicy Ontario peaches all this week. It's perhaps one of my favourite summer fruits and one of the representative fruits of summer in my opinion (along with cherries). My friend and I went peach picking in the Niagara region last weekend, which resulted in me coming home with 27 pounds of fruit. With so much fruit, super hot weather, no A/C, and only one person, I had to get through this fruit fast before it spoiled. So if I wasn't preserving peaches, then I was eating them or working them into my weekly menu.

Strawberry Jam

With so many strawberries on hand, I turned most of them into jam. I never really was much of a jam person until I started making my own. Store-bought jam, no matter how gourmet it is, still seems too...gelatinous to me, and far too sweet.

Strawberry Shortcake Cookies

Last Sunday was an absolutely stunning day to be outdoors in the GTA. Blue skies, sun beating down, hot without all that yucky humidity. While some may have headed for the beaches or the pools, I headed out to the strawberry fields.

strawberries_01

I haven't gone strawberry picking in years—I'd say at least since I was 7 or 8 years old. I remember my parents would slather sunscreen on my brother and I on a weekend morning, put on our hats and take us out to the strawberry fields. While my mom diligently picked strawberries, I hoped around from bush to bush with my little bucket, ate a lot of strawberries, with a few here and there finding their way into said bucket, and dug through dirt. So I may not have been the most handy helper at that age...

French Fridays with Dorie: Beggar's Spaghetti

Now, I love Dorie Greenspan. I have great admiration and love for her, and am such a big fan of her books and her recipes. All the recipes that I have tried so far from her latest book, Around My French Table, have turned out wonderfully.

So I had my doubts when I was reading through the latest "French Friday" recipe, Beggar's Linguine Nuts, dried fruit...and pasta? I do like all those elements individually, but I had a hard time trying to conceptualize all of them together in my head.

The Ultimate Granola

I think I'm in love. In love with this granola, that is.

steel cut granola_01

I've been such a huge fan of granola in the past year. My favourite way to start a morning is with a bowl of yogurt, some fresh fruit and homemade granola, drizzled with a bit of honey or maple syrup.

A Tale of Two Desserts

christmas_26

Close your eyes and imagine this.

A layer of chocolate génoise. A layer of chestnut cream. A layer of chocolate almond crunch. Another layer of chestnut cream. Repeat.

The result: a Chocolate Chestnut Crunch Cake.

French Fridays with Dorie: Marie-Hélène’s Apple Cake

If there's one apple cake you must make this fall, it's Marie-Hélène’s Apple Cake as featured in Dorie Greenspan's Around My French Table.

This "cake" is packed (and I mean packed) with apples—the perfect way to use up all those local apples from the market or the orchard.
