The Sweeter Side of Peaches

The other day, I posted about peaches being highlighted in savoury dishes. Today, we take a sweeter look at peaches. I love baking with stone fruits. They hold up so well after being exposed to the elements of heat, and their flavours get intensified. Making the most of all the fruits I recently picked, I made a summer fruit crisp with peaches, apricots, cherries, and handful of blueberries for good measure.

Aside from the wonderful educational experience of Tawse Winery and terroir, I was delighted to find out that we would be treated to lunch by the Chefs of The Only on King. The Only on King has been on my list of restaurants to try for quite some time now, ever since it was named to enRoute magazine's Top Ten New Restaurants in 2008.

I was lucky enough to have been invited to a Terroir trip at Tawse Winery along with some fellow food and wine writers. It's been a while since I was last in the Niagara wine region and I was due for another trip back. This trip was certainly to be a treat for all, as Tawse was recently named Canada's Winery of the Year, and I was eager to taste some of their Gold Medal-winning wines.

One of my all-time favourite summer fruits is peaches. I can never get enough of them when peach season rolls around. Their fuzzy skin blushed red. Their fragrant smell. Sweet flesh. Juices dripping down your chin and arm.
