Rhubarb Upside-Down Cake

I’m obsessed with rhubarb. Every spring, in the short eight- to ten-week window of the season, I load up on stalks of rhubarb at the market. There's something I love about those reddish pink stalks, and their refreshingly tart flavour.

I often like to roast the rhubarb with a bit of sugar and lemon juice to make a quick and easy compote, and serve it with my morning yogurt and granola. But when I came across this recipe from Saveur Magazine for a Rhubarb Upside-Down Cake, I couldn't resist with the fabulous local rhubarb at my disposal.

Rhubarb Upside-Down Cake

This cake is prepared à la tarte tatin method, in which the rhubarb is caramelized in a cast-iron pan before the batter is added and baked in the oven. At first, I was worried the cake wouldn’t turn out, as the batter was super thick and hard to spread around the pan. What I ended up with was a pretty sloppy looking cake with syrup seemingly running everywhere before it went into the oven. But I decided to let it do its thing, walked away for half an hour, and when I came back, the cake baked beautifully!

The crumb of the cake is rather dense, almost like a shortcake, with the sweet hint of vanilla. The caramelized rhubarb on top is melt-in-your-mouth tender, and the tartness counterbalances with the sweetness of the cake perfectly.

Rhubarb Upside-Down Cake

This cake is best served warm, with some vanilla ice cream or whipped cream. Any leftover cake should be kept at room temperature to keep it soft and moist; refrigerating it will harden and dry it out. (And it's the best excuse to have cake for breakfast!)

Market Spoils: Spicy Chicken Thighs with Rhubarb-Cucumber Salsa

Rhubarb! Asparagus! Ramps! I’ve been rejoicing in these spring produce that have been available at my local farmer’s market these past few weeks before they quickly disappear and make way for early summer fruit and vegetables. (By the way, who's ready for strawberries?!).

I often keep things simple, roasting the asparagus and ramps with a light drizzle of olive oil and a sprinkle of salt and freshly ground black pepper. I often roast the rhubarb as well, with a little lemon juice, sugar, and a vanilla bean, turning it into this beautiufl sweet-tart, melt-in-your-mouth compote that I like to top my morning yogurt with a little drizzle of honey.

Rhubarb, Where Have You Been All My Life?

Sad, but true. I've never had much rhubarb in my life until now. And now I'm desperately trying to catch up to lost time.

Rhubarb is not a common ingredient in Chinese cooking (frankly, non-existent), so I was never introduced to it as a child. And I guess I never had really good rhubarb going into my adulthood because nothing really stood out in my mind (or to my tastebuds). But this year, I haven't been able to stock up on the stuff. Each week at the farmer's markets, I would pick up two large bunches of the ruby-red stalks.

Lovely Jubbly Time at the Dish Cooking Studio

About two weeks ago, I went to check out the Dish Cooking Studio with my friend Suzanne. I happened across one of those group discounts in my email and sent it along to Suz, thinking it would be fun to spend a night cooking in the same kitchen. Before we knew it, we had signed up.

Rather than a cooking school, Dish describes itself as “a culinary destination for people to connect and have fun together.” If you're looking to pick up some kitchen skills, you're probably better off at, say, George Brown. Not to say that Dish probably won't walk you through some of the basics. It's just that their aim isn't to make a chef out of you. It's to ensure that you have a good time cooking in the kitchen, meeting new people, and enjoying a great meal at the end of it all.

Perth County Week: Lunch in the Barn

After an eventful morning touring some of Stratford’s finest food producers—Monforte Dairy, Soiled Reputation and Perth Pork Products—we made our way back to Soiled Reputation for lunch. We were certainly in for a treat, as Chef Neil Baxter of Stratford’s celebrated Rundles, along with two assistants, was preparing us a three-course lunch using ingredients from all three producers we visited in the morning.
