The first of my entree courses is a nod to my Chinese ethnicity, which is why I called it "fire chicken", a literal translation of the Chinese word for turkey (火雞).
Both entree dishes featured a duo. For my Chinese-inspired one, I did a Turkey Lettuce Wrap on one side, and Hainese Turkey on the other, an alternative take to the popular Hainese Chicken dish.
